So I've made this using leftover pulled pork but you can also make this with shredded or diced chicken or beef.

The ingredients needed to make Oven-baked Mexican Spring Rolls:
- Take 1 Onion *finely chopped
- Prepare 1-2 teaspoons Oil
- Make ready 500 g Lean Beef Mince
- Get 1/2 cup Corn Kernels
- Prepare 2 tablespoons Ketchup
- Get Shredded Tasty Cheese, Cheddar OR Fetta
- Take Spring Roll Wrappers
- Get Oil to spray OR brush
- Prepare <Mexican Taco Seasoning>
- Take 1 teaspoon Garlic Powder
- Prepare 2 teaspoons Ground Cumin
- Take 2 teaspoons Ground Coriander Seeds
- Take 1 teaspoon Dried Oregano
- Prepare 1/4 teaspoon Ground Cayenne Pepper OR Ground Chilli
- Take 1 teaspoon Ground Paprika
- Take 1/2 teaspoon Salt *add more if you like, I found 1 teaspoon is quite salty
- Take 1/4 teaspoon Ground Black Pepper
When Beef is cooked and Onion is soft, add Mexican Taco Seasoning, Ketchup and Corn Kernels, and cook for a few minutes until well combined. Cool slightly. *Note: Remove excess oil from the mixture. Line a large baking tray with baking paper. Baked Mexican Spring Rolls I love spring rolls either the filling is Chinese or Mexican or Indian.
Steps to make Oven-baked Mexican Spring Rolls:
- In a small bowl, combine all the Mexican Taco Seasoning.
- Heat Oil in a frying pan over medium heat, cook Onion and Beef Mince. When Beef is cooked and Onion is soft, add Mexican Taco Seasoning, Ketchup and Corn Kernels, and cook for a few minutes until well combined. Cool slightly. *Note: Remove excess oil from the mixture.
- Preheat the oven to 220°C. Line a large baking tray with baking paper.
- Place 1 Spring Roll Wrapper on a flat surface with a corner facing you. Cover remaining wrappers with a dump tea towel to prevent them from drying out.
- Place some beef mixture and Cheese across corner. Fold the corner over filling and roll up, fold in side corners, then roll up firmly to enclose. Wet the last corner with water to seal. Place on the prepared tray. Repeat with remaining beef mixture and cheese.
- Spay OR brush a small amount of Oil over the spring rolls and bake for 10 to 12 minutes or until golden.
So when ever I had leftover fajita mix, I use it in spring rolls and give a dish a new make over. But if you want, you can make fajita and use it for this rolls. I already have fajita recipe so I am not writing it again. These Mexican Spring Rolls with Cilantro Lime Dip use my Pico de Gallo as the filler. But you could use any chunky salsa that you like such as our Mexican Street Corn Salsa.
