  2. Cut the butternut squash into strips (0.5-0.75 inches thick). Start by cutting off the two hard ends. Then cut the pumpkin in half lengthwise and peel each half. Remove the seeds with a big spoon, then cut into strips lengthwise. Line the pumpkin strips on the baking sheet.
  3. Prepare the coating by mixing olive oil with garlic, thyme and a pinch of salt and pepper. Brush it on the pumpkin strips.
  4. Bake until tender. It will take about 20 minutes (but start checking the pumpkin with a fork after 15 minutes). Serve directly.

Don't worry about the burned parts of the skin, but if there are any burned parts of pumpkin flesh, you may not want to include those. Throw away the leftover skins, or compost them, or whatever. After halving a pumpkin and removing the seeds, it's time to make roasted pumpkin! Brush the flesh of the pumpkin with oil to lock in moisture and help the edges caramelize. We like using coconut oil if adding to sweet dishes and avocado oil when adding to something savory.
